Easy and Yummy Comfort Food11 Fresh out of the oven

Many years ago, long before Pinterest and even the internet, I found a Speedy Quiche recipe using Spam in a magazine. Over the years I have modified it and experimented with different flavors and food combinations with very tasty outcomes, enjoyed by my family. Here is one of the many variations I have discovered.

When you’re looking for a hearty, cozy weeknight dinner recipe, you really can’t go wrong with this easy, no-fuss comforting pot pie using the leftovers and ingredients that you already have on hand!

This is an easy pot pie recipe that is great for using leftover turkey or chicken. You can add any vegetables that you like, but when I made it I had plenty of veggies remaining on my veggie platter from our Thanksgiving gathering and gave them a second life in the following recipe. You can do the same using a deep dish pie plate or a 9 x 13 baking dish.

Easy Turkey Pot Pie

Ingredients:
¼ cup chopped onion
¼ cup chopped carrot
¼ cup chopped celery
¼ cup chopped broccoli
¼ cup chopped cauliflower
1 large potato (diced)
1 Tbs olive oil
1 clove minced garlic
1 tsp poultry seasoning
1 Tbs freshed chopped parsley
4 Tbs unsalted butter
4 Tbs flour
4 cups turkey stock
2-4 cups cooked turkey (bite size)
1 cup milk
½ cup Bisquick
1 large egg
Fresh ground black pepper and salt to taste

Directions:
Heat oven to 400°F.

In a large skillet, sauté the veggies in olive oil with the minced garlic, poultry seasoning and parsley, until the veggies are tender.

Place veggie mixture in an ungreased deep dish pie plate. In the same pan melt the butter until bubbly, whisk in the flour until cooked and add the stock, stirring to create a smooth gravy. Once the gravy thickens, add the bite size turkey until heated through.

Spoon the meat and gravy over the veggie mixture in your baking dish.

Combine remaining ingredients in bowl, blend until smooth and pour evenly into pie plate.

Bake for 30 minutes or until knife inserted in center comes out clean.  Let stand 5 minutes before cutting.  Serve with a nice garden salad and a little chardonnay.  (Also great with leftover chicken and any other veggies you may have on hand.
